A legend in the industry, Chef Chan began his journey in the kitchens of Hong Kong in the 1960s and later made his mark in Singapore’s most respected restaurants. With decades of experience and a shared love for heritage recipes, the two chefs bring together old-world skill and modern sensibility in a collection that is both classic and timeless.

For Master Chan, mooncake-making is a lifelong craft rooted in tradition. Trained in age-old Cantonese techniques, he preserves the heritage of handcrafting each double salted egg yolk mooncake—carefully kneading the yolks into the paste and wrapping each one in a delicate crust. While machines now assist in some steps, these artisanal touches remain, ensuring every mooncake carries the soul, flavour, and care of true craftsmanship.

Speaking about the collaboration, Chef Loong shared:
“In every mooncake, there’s a story. In every bite, it’s 35 years of Kimly heritage.”

The collection is presented in a limited-edition commemorative tin illustrated by local artist James, depicting Kimly’s 35 years of heritage through a nostalgic streetscape — a keepsake designed to be treasured and reused long after the festival.
